Ingredients
- 2
racks baby back ribs (about 2 lbs), membrane removed
- 1 tsp.
five-spice powder
Kosher salt and pepper
- 1/4 cup
ketchup
- 1/4 cup
tamarind paste (tamarind concentrate)
- 2 Tbsp.
low-sodium soy sauce
- 2 Tbsp.
honey
- 1 Tbsp.
chile-garlic sauce
Sesame seeds and cilantro, for serving
Directions
- Step 1Heat oven to 275°F. Line a large rimmed baking sheet with foil and place ribs on top. In a small bowl, combine five-spice powder and ½ teaspoon each salt and pepper; rub all over ribs. Tightly cover baking sheet with foil and bake until meat is tender and easily pulls away from bone, 2 to 2½ hours.
- Step 2Meanwhile, combine ketchup, tamarind paste, soy sauce, honey and chile-garlic sauce.
- Step 3When ribs are done, heat grill on medium-high. Grill ribs, basting with sauce and turning occasionally, until beginning to char, 5 to 6 minutes.
- Step 4Transfer to cutting board and cut into pieces. Sprinkle with sesame seeds and cilantro.
