Iced Spiced Skillet Rolls

Ingredients
Rolls
- 2 Tbsp. vegetable oil
- 1 cup whole milk, warm
- 1/2 cup granulated sugar
- 2 large eggs
- 2 packets (1 tbsp. total) instant yeast
- 1 tsp. vanilla extract
- 1 tsp. salt
- 1/4 cup plus 2 tbsp. butter, melted
- 4 1/4 cups plus 1/4 c. all-purpose flour
- 1/2 cup brown sugar
- 2 Tbsp. ground cinnamon
Glaze
- 1/3 cup confectioners' sugar
- 3 oz. cream cheese, softened
- 3 Tbsp. butter, softened
- 1 Tbsp. milk
- Pinch salt
Directions
- Step 1Make Rolls: Pour oil into large bowl. With stand mixer on medium speed (with paddle attachment), beat milk, sugar, eggs, yeast, vanilla, salt and 1/4 cup butter until combined. Add flour; beat until dough comes together. With floured hands, transfer to floured surface (dough will be very sticky). Knead until no longer sticky, sprinkling up to 1/4 cup more flour over and under dough as needed; form into ball.
- Step 2Transfer to bowl, rolling to coat in oil. Cover with damp kitchen towel and plastic wrap. Let rise in warm spot 2 hours.
- Step 3Lightly grease 12-inch ovenproof skillet. With floured hands, punch dough down; turn out onto lightly floured surface. With floured rolling pin, roll dough into 20" by 12" rectangle. Brush with remaining 2 tablespoons butter; sprinkle with brown sugar and cinnamon. Roll dough tightly, starting on one long side. Cut into 12 pieces; arrange in skillet, swirled sides up. Cover with damp kitchen towel and plastic wrap. Place in warm spot; let rise 1 hour. Bake immediately or refrigerate overnight. (If refrigerated, let stand at room temperature 30 minutes before baking.)
- Step 4Preheat oven to 350 degrees F. Uncover skillet; bake 30 minutes or until top is golden brown. Meanwhile make Glaze: Beat all ingredients until smooth. Remove skillet from oven; let stand 5 minutes. Top with glaze. Serve warm.
