Roasted Asparagus With Creamy Feta
This easy-to-prep veggie side may even outshine your main

Puree feta cheese with plain whole-milk yogurt for an ultra-creamy spread to pair with sweet roasted asparagus stalks.
Ingredients
- 2 lb.
asparagus, trimmed
- 2 Tbsp.
olive oil
Kosher salt and pepper
- 8 oz.
feta cheese
- 1/2 cup
plain whole-milk yogurt
- 1
lemon
Directions
- Step 1Heat oven to 425°F. On a rimmed baking sheet, toss asparagus with oil and ½ teaspoon each salt and pepper. Transfer half to second sheet and arrange both in a single layer.
- Step 2Roast, shaking both trays once, until asparagus is lightly charred and just tender, 10 to 12 minutes.
- Step 3Meanwhile, in a food processor, puree feta and yogurt until smooth. Spread half of mixture onto platter.
- Step 4Over each sheet of asparagus, grate zest from half of lemon and toss to combine. Arrange asparagus on top of feta mixture and serve with remaining feta mixture.
AIR FRYING INSTRUCTIONS: Heat air fryer to 400°F. In large bowl, toss 1 pound asparagus with 1 tablespoon olive oil and 1/4 teaspoon each salt and pepper. Add asparagus to air fryer and air-fry, shaking basket halfway through, 10 minutes. Meanwhile, in food processor, puree 4 ounces feta cheese and 1/4 cup plain yogurt until smooth. Spread half of mixture onto a platter. Grate zest from half of lemon over cooked asparagus in air fryer. Using tongs, quickly toss to combine, then arrange asparagus on top of feta mixture. Serve with remaining feta mixture.
