Elderflower Gin Cocktail
Happy hour feels so much fancier with this elderflower gin cocktail.

Some things are just meant to go together: peanut butter and jelly, wine and cheese, salt and pepper. Well, we’d also put elderflower liqueur and gin in that camp of two disparate things that instantly become more delicious when paired up. Dry, herbal gin combined with sweet, floral elderflower liqueur tastes like a refreshing garden party. So what’s the best way to enjoy these two classy spirits? In this elderflower gin cocktail, served ice cold on an unseasonably warm day (perhaps as a precursor to a nice spring dinner?). Spring, we’re ready for ya!
This drink is basically a cucumber elderflower gimlet with a fizz, made from English cucumber, elderflower liqueur (such as St-Germain), plenty of fresh lime juice, and a topper of sparkling wine or club soda. It’s a cool cucumber drink that’s perfect for the first days of spring right through the final, balmy days of summer. It’ll fit right in with your usual classic cocktail rotation or become your new go-to summer drink recipe.
Just muddle cucumber and mint together in the bottom of a pitcher, stir in gin, lime juice and elderflower liqueur, then add sparkling wine or club soda. Top with cucumber slices and sliced limes, then serve each cocktail over ice with cucumber ribbons that make the prettiest (easy!) garnish. Cheers!

English cucumber
- 1/2 cup
cup fresh mint, plus more for serving
- 1 cup
gin
- 1/2 cup
fresh lime juice (from about 5 limes), plus 2 limes, sliced
- 1/2 cup
elderflower liqueur
- 1
750-ml bottle sparkling wine or 2 12-oz cans club soda

Directions
- Step 1Cut off one-third of the cucumber and set aside. Thinly slice the remaining cucumber and place half in a pitcher along with mint; gently muddle to release cucumber’s juices.
- Step 2Stir in the gin, lime juice and elderflower liqueur, then add the sparkling wine, remaining sliced cucumber and half of the sliced limes.
- Step 3Using a vegetable peeler, shave the reserved cucumber lengthwise into ribbons. Roll into spirals and secure with toothpicks.
- Step 4Serve spritz over ice with remaining lime slices and cucumber spirals.
