Roasted Cod and Potatoes With Chorizo Vinaigrette

You only need a handful of ingredients — potatoes, cod, chorizo, shallot, and sherry vinegar — to make this flavorful weeknight dinner.

Ingredients
- 2 Tbsp.
plus 1 tsp olive oil
- 1 1/2 lb.
new potatoes, halved
Kosher salt and pepper
- 4
6-ounce pieces of cod fillet
- 1 oz.
chorizo, finely chopped
- 1
shallot, finely chopped
- 2 Tbsp.
sherry vinegar
Parsley, for serving
Directions
- Step 1Heat oven to 450°F. Coat a rimmed baking sheet with 2 tablespoons olive oil. Add potatoes, season with salt and pepper and place cut sides down; roast 15 minutes.
- Step 2Pat cod fillets dry with a paper towel and season with ¼ tsp each salt and pepper. Place cod on baking sheet with potatoes, moving potatoes aside as necessary. Roast until cod is opaque throughout, 7 to 9 minutes more.
- Step 3Meanwhile, heat 1 teaspoon olive oil in small skillet on medium. Add chorizo and cook until crispy, 2 to 3 minutes. Remove skillet from heat and add shallot. Stir in sherry vinegar. Serve over fish and potatoes and sprinkle with parsley.
