Ingredients

large peeled and deveined shrimp
- 1
12-ounce jar roasted red peppers, drained and cut into 1-inch pieces
- 4
scallions, sliced
- 2
cloves garlic, pressed
- 2 Tbsp.
dry white wine
- 1 Tbsp.
fresh lemon juice
Kosher salt and pepper
- 2 Tbsp.
olive oil
- 4 oz.
feta cheese, crumbled
Pitas and baby spinach, rice or couscous, or salad greens, for serving
Directions
- Step 1Heat oven to 425°F. In 1½- to 2-qt baking dish, combine shrimp, red peppers, scallions, garlic, wine, lemon juice and ¼ teaspoon each salt and pepper.
- Step 2Drizzle with olive oil and sprinkle with feta cheese. Bake until shrimp are opaque throughout, 12 to 15 minutes. Spoon into pitas along with baby spinach, serve over rice or couscous or toss with your favorite salad greens.
