Grilled Romaine Lettuce With Creamy Feta Dressing

Ingredients
- 4 oz.
feta cheese
- 2/3 cup
extra virgin olive oil
- 1/3 cup
nonfat plain Greek yogurt
- 3 Tbsp.
fresh lemon juice
- 1
clove garlic
Kosher salt and pepper
- 1/4 cup
packed fresh dill, chopped
- 3
romaine lettuce hearts
- 1/4 cup
roasted sunflower seeds
Directions
- Step 1Heat grill to medium. In a blender or food processor, puree feta, oil, yogurt, lemon juice, garlic, and ¼ teaspoon each salt and pepper. Transfer to a medium bowl; stir in dill.
- Step 2Cut romaine lettuce hearts in half lengthwise; grill until charred in spots, about 2 minutes per side. Serve immediately, drizzled with yogurt dressing and sprinkled with sunflower seeds.
