Here’s an easy appetizer for Cinco de Mayo: Layer beef and cheese on crunchy wonton wrappers, bake until bubbly, then top with salsa and sour cream. It's a one-bite fiesta!

Ingredients

wonton wrappers, each cut horizontally in half
- 1 Tbsp.
vegetable oil
- 8 oz.
ground beef
- 1 Tbsp.
taco seasoning
- 1 1/2 cups
shredded Cheddar cheese
- 1/2 cup
pico de gallo
- 1/4 cup
sour cream
Chopped cilantro and hot sauce, for serving
Directions
- Step 1Heat oven to 375°F. Spray 24 mini muffin cups with nonstick cooking spray.
- Step 2Place 2 wonton halves in each cup, overlapping to form an X. Bake until golden and crisp, 6 to 8 minutes.
- Step 3In medium skillet, heat oil on medium-high and brown beef until cooked through. Add taco seasoning and 1/4 cup water and simmer 1 to 2 minutes or until thickened, stirring.
- Step 4In each wonton cup, layer scant 1 tablespoon meat mixture and 1 tablespoon cheese. Bake until edges are golden brown, about 5 minutes.
- Step 5Top cups with pico de gallo and sour cream; sprinkle with cilantro and hot sauce, if desired.
