Ingredients

brown sugar
- 2 tsp.
ground cinnamon
Wooden skewers, pre-soaked

medium pineapple, rind removed and sliced lengthwise into spears
Toasted coconut and melted ice cream, for serving
Directions
- Step 1Heat grill to medium-low.
- Step 2In a shallow bowl, mix together brown sugar and cinnamon.
- Step 3Thread a wooden skewer into each pineapple spear.
- Step 4Sprinkle each side of pineapple spears with brown sugar mixture, pressing to help adhere to pineapple. Grill until lightly charred and caramelized, 3 to 4 minutes per side.
- Step 5Transfer to plates or a platter. Sprinkle with toasted coconut and serve with melted ice cream for dipping.
