Ingredients
- 1 cup
all-purpose flour
- 1/4 tsp.
kosher salt
- 1/4 tsp.
baking soda
- 1/3 cup
plus 1 Tbsp nut butter (peanut, almond or cashew)
- 1/2 cup
granulated sugar
- 1/3 cup
packed light brown sugar
- 1
large egg
- 2 Tbsp.
cold water, plus more if necessary
- 1 tsp.
pure vanilla extract
- 1/4 cup
chopped nuts
Directions
- Step 1Heat oven to 375°F. Line 2 baking sheets with parchment paper. In medium bowl, whisk together flour, salt and baking soda.
- Step 2In large bowl of electric mixer, beat nut butter until smooth, about 1 minute. Mix in sugars, then add egg, 2 tablespoons water and vanilla and mix until thick and glossy, 2 to 3 minutes.
- Step 3Reduce speed to low, add flour mixture and mix until combined (if dough is crumbly, add 1 to 2 teaspoons water). Fold in nuts. Drop dough by 2-tablespoon portions, 2 inches apart, onto prepared sheets and bake until puffed and beginning to brown around edges, 10 to 11 minutes. Transfer to wire rack to cool completely.
