Yellow Split Pea Dip

This easy split pea dip is made with yellow lentils and turmeric for a gorgeous golden hue that stands out on the app table.

Ingredients
- 1 cup
yellow split peas
- 1
small onion, finely chopped
- 1
large clove garlic, pressed
- 1
bay leaf
- 1/2 tsp.
ground turmeric
Kosher salt
- 2 Tbsp.
olive oil, plus more for serving
- 1 Tbsp.
fresh lemon juice
Finely chopped red onion, finely chopped parsley and paprika, for serving
Directions
- Step 1In small saucepan, combine split peas with 2 1/2 cups water and bring to a boil, skimming foam that rises to surface. Lower heat and add onion, garlic, bay leaf, turmeric and 1/2 teaspoon salt and simmer until split peas are very tender, 50 to 60 minutes.
- Step 2Discard bay leaf and transfer split pea mixture, including any liquid, to food processor. Add olive oil and lemon juice and puree until smooth.
- Step 3Transfer to serving bowl, drizzle with additional olive oil and top with red onion, parsley and sprinkle of paprika if desired. Makes 2 1/2 cups.
