
Spread misshapen moss cookies with green frosting and top with cookie and graham cracker crumbs to set an enchanted forest-floor scene.
Ingredients
- 2 3/4 cups
all-purpose flour
- 1/2 tsp.
baking powder
- 1 cup
(2 sticks) unsalted butter, at room temp
- 3/4 cup
granulated sugar
Moss- and leaf-green gel food coloring
- 1
large egg
- 1 tsp.
pure vanilla extract
- 1/2 cup
buttercream or premade frosting
- 2
graham crackers
Directions
- Step 1Heat oven to 350°F and line 2 large cookie sheets with reusable silicone baking mats or parchment paper.
- Step 2In large bowl, whisk together flour, baking powder and salt. In separate large bowl, using electric mixer, beat butter and sugar until light and fluffy, about 3 minutes. During last minute, add a few drops of gel food coloring to make dark green color. Beat in egg and then vanilla.
- Step 3Reduce mixer speed to low and gradually add flour mixture, mixing until just incorporated. Take unevenly sized pieces of dough and spread into thin, rough cookie shapes (about 1/8 inch to 1/4 inch thick) on prepared cookie sheets, using offset spatula or palm of hand.
- Step 4Bake, rotating positions of pans halfway through, until cookies feel sandy on top, 13 to 15 minutes. Let cool on wire rack.
- Step 5To decorate, tint frosting green. Finely crumble graham crackers and 2 moss cookies. Working 1 at a time, lightly spread underside of remaining cookies with thin layer of frosting and immediately sprinkle with cookie crumbs.
FOOD DYE 101: We love using gel paste food coloring instead of liquid for these ghoulishly green treats. The paste is thick and creates a vibrant, intense color without thinning out the frosting. Plus, a little goes a long way. If liquid food coloring is all you have on hand, use a few extra drops to create the desired moss-green hue.
