  • 1

large red onion, sliced 1/4 in. thick

  • 2 tsp.

grated lime zest plus 2 Tbsp lime juice, plus lime wedges for serving

  • 1/4 tsp.

    ground cumin

  • 1 Tbsp.

    plus 2 tsp canola oil

  • 1/2 tsp.

    granulated garlic, divided

  • Kosher salt and pepper

  • 12 oz.

skirt steak (cut crosswise into 4-in. pieces) or hanger steak (halved)

  • 1 tsp.

    ancho chile powder

  • 1/4 cup

cilantro, chopped, plus more for serving

  • 8

    6-in. flour tortillas, warmed

  • Sour cream, for serving

Directions

    1. Step 1In large bowl, toss peppers, onion, lime zest and juice, cumin, 1 tablespoon oil, ¼ teaspoon garlic, ½ teaspoon salt and ¼ teaspoon pepper. Air-fry at 400°F, shaking occasionally, 10 min.
    2. Step 2Meanwhile, rub steak with remaining 2 tsp oil, then season with ancho chile powder, remaining ¼ teaspoon garlic and ½ teaspoon each salt and pepper. Push vegetables to 1 side of air fryer and add steak to other side. Air-fry, flipping once, to desired doneness, 10 minutes for medium-rare.
    3. Step 3Transfer steak to cutting board and let rest at least 5 minutes before slicing. Toss vegetables with cilantro. Fill tortillas with steak and peppers, then top with sour cream, sprinkle with cilantro and serve with lime wedges if desired.
