Ingredients

  • 1 cup

    marinara sauce

  • 2

    medium zucchini, chopped

  • 4

    cod fillets (about 1 1/2 pounds total)

  • salt

  • pepper

  • 1 Tbsp.

    olive oil

  • 2

    cloves garlic, chopped

  • 1/4 tsp.

    crushed red pepper

  • 1 lb.

    spinach

  • Whole wheat roll, for serving

Directions

    1. Step 1In a 10-inch skillet, combine marinara sauce and zucchini. Heat to simmering on medium.
    2. Step 2Sprinkle cod with 1/4 teaspoon each salt and pepper; add to simmering sauce. Cover; cook 7 minutes or until cod is just opaque throughout.
    3. Step 3While cod cooks, in 5-quart sauce pot, heat olive oil on medium. Add garlic and crushed red pepper. Cook 1 minute, stirring. Add spinach and 1/8 teaspoon salt. Cover; cook 5 minutes or until spinach has wilted, stirring occasionally.
    4. Step 4On plates, top spinach with sauce and cod. Serve with a whole wheat roll.

About 320 cals, 35 g protein, 31 g carbs, 8 g fat (1 g sat), 8 g fiber, 1,295 mg sodium.
