Ingredients

marinara sauce

medium zucchini, chopped
- 4
cod fillets (about 1 1/2 pounds total)

olive oil
- 2
cloves garlic, chopped
- 1/4 tsp.
crushed red pepper
- 1 lb.
spinach
Whole wheat roll, for serving
Directions
- Step 1In a 10-inch skillet, combine marinara sauce and zucchini. Heat to simmering on medium.
- Step 2Sprinkle cod with 1/4 teaspoon each salt and pepper; add to simmering sauce. Cover; cook 7 minutes or until cod is just opaque throughout.
- Step 3While cod cooks, in 5-quart sauce pot, heat olive oil on medium. Add garlic and crushed red pepper. Cook 1 minute, stirring. Add spinach and 1/8 teaspoon salt. Cover; cook 5 minutes or until spinach has wilted, stirring occasionally.
- Step 4On plates, top spinach with sauce and cod. Serve with a whole wheat roll.
