Maple-Ginger Glazed Carrots

Ingredients
- 1/4 cup
fresh orange juice
- 1 Tbsp.
lemon juice
- 3 Tbsp.
unsalted butter
- 1 Tbsp.
grated fresh ginger
Kosher salt
- 2 lb.
medium carrots
- 3 Tbsp.
maple syrup
Chopped parsley, for serving
Directions
- Step 1Add orange and lemon juices, butter, ginger and ½ tsp salt to Instant Pot.
- Step 2Slice carrots diagonally ½ inch thick and add them to the pot. Drizzle with maple syrup. Cover and lock the lid.
- Step 3Cook on high pressure for 3 minutes. Use quick release method to release pressure and open lid.
- Step 4Press [Cancel]. Press [Saute] and simmer, stirring often until juice thickens and glazes the carrots, about 5 minutes. Sprinkle with parsley, if desired.
