This one-pot gazpacho gives a savory twist to your favorite summer fruits by blending them with garlic and sherry vinegar.

Ingredients

  • 1 1/4 lb.

    nectarines or peaches (about 4 small), pitted, plus slices for serving

  • 1 lb.

    red or orange heirloom tomatoes (about 3), quartered

  • 2 Tbsp.

    olive oil, plus more for serving

  • 2 tsp.

    sherry vinegar

  • 1

    small clove garlic, grated

  • Kosher salt and pepper

Directions

    1. Step 1In blender, puree nectarines, tomatoes, oil, vinegar, garlic, and 1/2 teaspoon each salt and pepper until smooth.
    2. Step 2Refrigerate at least 1 hour and up to overnight before serving. Serve topped with sliced nectarines, cracked pepper, and extra drizzle of oil.
