This one-pot gazpacho gives a savory twist to your favorite summer fruits by blending them with garlic and sherry vinegar.

Ingredients
- 1 1/4 lb.
nectarines or peaches (about 4 small), pitted, plus slices for serving
- 1 lb.
red or orange heirloom tomatoes (about 3), quartered
- 2 Tbsp.
olive oil, plus more for serving
- 2 tsp.
sherry vinegar
- 1
small clove garlic, grated
Kosher salt and pepper
Directions
- Step 1In blender, puree nectarines, tomatoes, oil, vinegar, garlic, and 1/2 teaspoon each salt and pepper until smooth.
- Step 2Refrigerate at least 1 hour and up to overnight before serving. Serve topped with sliced nectarines, cracked pepper, and extra drizzle of oil.
