Ingredients

small head green leaf lettuce, torn
- 1 cup
shredded rotisserie chicken
- 1 cup
canned pinto beans, rinsed
- 3/4 cup
fresh corn kernels (from 1 ear)
- 1/4
red onion, thinly sliced
- 2 Tbsp.
fresh lime juice, plus wedges
- 1 Tbsp.
olive oil
- 1/2 tsp.
honey
Kosher salt and pepper
Directions
- Step 1Divide lettuce, chicken, beans, corn, and onion between two containers. Add a lime wedge to each.
- Step 2In a bowl, whisk together lime juice, oil, honey, and pinch each salt and pepper. Divide among two tiny containers and pack with salad. Drizzle over just before eating.
