Spicy Bánh Mì Wraps

Take a cue from the Vietnamese street food staple and fill wraps with meat and pickled veggies.

Ingredients
- 2 Tbsp.
rice wine vinegar
- 1 tsp.
sugar
Kosher salt
- 1
medium carrot, thinly sliced
- 1/4 cup
mayonnaise
- 1 Tbsp.
Sriracha
- 4
10-inch wraps
- 3/4 lb.
thinly sliced ham
- 1
Persian cucumber, thinly sliced
- 4
radishes, thinly sliced
- 1/4 cup
fresh mint
- 1/4 cup
fresh cilantro leaves
Directions
- Step 1In a small bowl, whisk together vinegar, sugar, and ½ teaspoon salt. Add carrot and toss to coat; let stand for 10 minutes.
- Step 2In a separate small bowl, mix mayonnaise and Sriracha. Spread 1 tablespoon on each wrap, then top with ham.
- Step 3Toss cucumber into carrots and spoon on top of ham. Top with radish, mint, and cilantro and roll tightly.
