Ingredients
- 1/4 cup
dried apricots
- 1/2 cup
white wine vinegar
- 1 Tbsp.
olive oil
- 1 tsp.
Dijon mustard
- 1
scallion, finely chopped
Directions
- Step 1Place apricots and vinegar in a small saucepan and bring to a boil. Boil 2 minutes, then remove from heat and let sit 10 minutes. Strain into a measuring cup; reserve apricots.
- Step 2Finely chop apricots. In a small bowl, mix together oil, mustard, and 1 tablespoon apricot vinegar. Stir in apricots and scallion.
