Simple and sophisticated, this fruity toast is perfect for breakfast.

Ingredients

  • 4 Tbsp.

    white wine vinegar

  • 4 tsp.

    honey

  • 2

    nectarines, sliced

  • 1/2 cup

    extra virgin olive oil

  • 1 Tbsp.

    very coarsely cracked black pepper

  • 3/4 cup

    ricotta cheese

  • 4

    large thick slices country bread 

Directions

    1. Step 1In a bowl, whisk together vinegar and honey to dissolve. Add nectarine slices and toss to coat; let marinate 10 minutes. Add olive oil and black pepper and toss to coat.
    2. Step 2Grill or toast bread and spread with ricotta cheese, then spoon nectarines and juices on top.

Nutritional Information (per serving): About 540 calories, 36 fat (8 g saturated), 10 g protein, 400 mg sodium, 45 g carb, 3 g fiber
