Ingredients

thin slices deli ham, patted dry
- 3
large eggs
- 3/4 cup
half-and-half
- 2 Tbsp.
granulated sugar
- 1 cup
pure vanilla extract
Pinch kosher salt
1 to 3 day-old croissants, torn into 2-inch pieces (you need 3 cups total)
Demerara or turbinado sugar (such as Sugar in the Raw), for sprinkling
Berries, for serving
Directions
- Step 1Heat the oven to 400°F. Coat 6 cups of nonstick muffin tin with cooking spray.
- Step 2Tuck 1 slice of ham into each cup, trying to make as much of a cup shape as possible, with the edges sticking out the top. You’re going to feel ridiculous doing this. It’s OK. Life is ridiculous.
- Step 3In a bowl, whisk together eggs, half- and-half, granulated sugar, vanilla, and salt.
- Step 4Throw the croissant pieces into the egg mixture, toss to coat and let sit, tossing occasionally, 15 minutes.
- Step 5Fill the ham cups with the croissant mixture and sprinkle each one with Demerara sugar. Bake until the tops are golden and crusty, 15 to 18 minutes. Let them cool slightly, then unmold them by slipping a knife under the cups and gently transferring them to a plate. Serve with berries if desired.
