Ingredients
Kosher salt

green beans, trimmed
- 2 cups
stale bread, torn into small pieces
- 3 Tbsp.
olive oil
- 4
scallions, thinly sliced
- 3 Tbsp.
cornstarch
- 1/8 tsp.
freshly ground nutmeg
- 2 1/2 cups
whole milk
- 8 oz.
extra-sharp Cheddar cheese, coarsely grated
- 1/4 cup
finely grated Parmesan cheese
Directions
- Step 1Heat oven to 375°F. Fill large bowl with ice water. Bring large pot of water to a boil. Add 1 tablespoon salt and then, in batches, cook green beans until just tender, 3 to 4 minutes. Transfer green beans to ice water to cool; drain and transfer to large bowl.
- Step 2 In another bowl, toss bread with oil, then scallions. In medium saucepan, whisk together cornstarch, nutmeg, 1/2 cup milk and 1/2 teaspoon each salt and pepper until smooth. Gradually whisk in remaining 2 cups milk and bring to a boil; boil 2 minutes.
- Step 3Reduce heat to medium-low and stir in Cheddar, 1/2 cup at a time, stirring until melted before adding next 1/2 cup. Stir in Parmesan to melt. Toss with green beans to evenly coat.
- Step 4Transfer green beans to 3-quart baking dish, sprinkle with scallion crumbs and bake until golden brown, 25 to 30 minutes.
