Bloody Caesar with Maple-Fennel Bacon

This isn't your average Bloody Mary. Nope, it's tangier and topped with sweet and crispy bacon. This recipe is one of actress Tiffani Thiessen's many delicious creations from her best-selling cookbook, Pull Up a Chair: Recipes from My Family to Yours.
Ingredients
For the Cocktail
- 8 cups
Clamato juice
- 1 cup
vodka
- 1 cup
plus 2 Tbsp fresh lemon juice (from about 3 lemons)
- 1/4 cup
prepared horseradish, drained
- 1 Tbsp.
Worcestershire sauce
Pepper
Celery salt, for serving
For the Bacon
- 3 Tbsp.
maple syrup
- 1 Tbsp.
dark brown sugar
- 12
slices thick-cut bacon
- 2 tsp.
fennel seeds, crushed

Directions
Make Cocktail
- Step 1In pitcher, combine Clamato juice, vodka, lemon juice, horseradish, and Worcestershire sauce. Season with pepper and celery salt.
- Step 2Spread some celery salt on a plate. Dip rims of 6 highball glasses in water and press into celery salt to coat. Add ice to glasses, then pour in vodka mixture. Top each glass with 1 slice Maple-Fennel Bacon.
Make Bacon
- Step 1Heat oven to 375°F. Line large rimmed baking sheet with foil and set wire rack inside.
- Step 2In small bowl, whisk together maple syrup and brown sugar.
- Step 3Lay bacon on rack in single layer, making sure slices do not touch. Brush each slice with syrup mixture and sprinkle with crushed fennel seeds and pinch black pepper.
- Step 4Bake until bacon is browned and crisp, 25 to 30 minutes. Using spatula, loosen bacon from rack and let cool 5 min. before serving.
