Ingredients

  • 2 3/4 cups

    lowfat milk

  • 1/4 cup

    melted butter

  • 1 Tbsp.

    vanilla extract

  • 1 cup

    old-fashioned oats

  • 1 cup

    quinoa

  • 1/2 cup

    roasted, salted almonds

  • 1/2 cup

    brown sugar

  • 3 Tbsp.

    chia seeds

  • 1 tsp.

    baking powder

  • 1/4 tsp.

    salt

  • 1 cup

    blueberries

  • 2 cups

    strawberries

  • Lowfat vanilla yogurt

Directions

    1. Step 1Preheat oven to 375 degrees F. Coat 2 quart baking dish with nonstick cooking spray. Place on foil-lined cookie sheet. In a medium bowl, whisk together milk, butter, and vanilla extract. In prepared baking dish, combine oats, quinoa, almonds, brown sugar, chia seeds, baking powder, and salt. Pour milk mixture over dry ingredients in baking dish. Top with blueberries and strawberries. Bake 45 minutes or until almost all liquid has been absorbed. Let stand 5 minutes before serving. Serve with vanilla yogurt, if desired.
