Spaghetti with Roasted Sweet Potatoes

This simple pasta is perfect for weeknight cooking, and loaded with healthy, vitamin A-rich sweet potatoes.

Ingredients
- 2 sweet potatoes
- 1 Tbsp. olive oil
- 3 sprig rosemary
- 1/2 tsp. salt
- 12 oz. spaghetti
- cup pine nuts
- cup finely grated Parmesan cheese
- 2 Tbsp. olive oil
- 1/4 tsp. salt
Directions
- Step 1Preheat oven to 475 degrees F. On parchment paper–lined jelly-roll pan, toss cubed sweet potatoes, 1 tablespoon olive oil, rosemary, and 1/2 teaspoon salt. Roast 15 minutes or until tender.
- Step 2Meanwhile, heat large covered saucepot salted water to boiling on high. Add spaghetti; cook as label directs.
- Step 3Place pine nuts in medium bowl. Microwave on high 1 to 2 minutes or until lightly toasted.
- Step 4Drain pasta, reserving 1/4 cup cooking water. In large bowl, toss pasta, sweet potatoes, pine nuts, Parmesan cheese, remaining 2 tablespoons olive oil, remaining 1/4 teaspoon salt, and the reserved cooking water.
