Ingredients
- 4 flour tortillas
- 4 cups baby spinach
- 1 medium red pepper
- 1 medium zucchini
- 2 tsp. minced garlic
- 2 tsp. olive oil
- salt
- black pepper
- 3/4 cup marinara sauce
- 4 oz. goat cheese
- 1/4 cup finely grated Parmesan cheese
- 1/4 cup fresh basil leaves
Directions
- Step 1Arrange oven racks in top and bottom thirds of oven. Preheat oven to 475 degrees F. Spray 2 large cookie sheets with nonstick cooking spray; place 2 tortillas on each.
- Step 2In large bowl, toss vegetables, garlic, oil, and 1/2 teaspoon each salt and black pepper until coated. Microwave on high 2 minutes, stirring once. Drain, if necessary. Spread sauce on tortillas. Top with vegetables and cheeses.
- Step 3Bake 12 minutes or until tortillas are crisp around edges, switching racks halfway. Top with basil.
