Crispy Pork Noodles
These pork noodles are a tasty, 30-minute meal.

Crispy pork noodles pack so much flavor into such little time (and effort!) that you’ll impress the whole family with this easy weeknight dinner. Inspired by Szechuan cuisine, the recipe features ramen noodles tossed in a creamy peanut sauce and topped with crispy, pan-fried pork, tatsoi or baby spinach, scallions and chopped peanuts for even more crunch. It’s cozy comfort food that’s easy enough to prepare on any night of the week.
You can use classic dried ramen in this recipe (just ditch the spice packet) or seek out fresh ramen or lo mein noodles at Asian markets or specialty stores. Another ingredient you’ll want to have on hand? Chinese five spice. While there are often, yes, five spices in the mix (usually star anise, cinnamon, cloves, fennel seeds and Szechuan peppercorn), the “five-spice” name actually refers to five flavors: sweet, sour, bitter, salty and umami. The seasoning hits them all! Just a pinch of this powder contributes depth of flavor and a tongue-tingling spice from the Szechuan peppercorn.
Quick tip: For the crispiest pork, use a cast-iron skillet and resist the urge to stir. Too much movement in the pan will prevent the pork from developing a crunchy, golden-brown crust.
Ingredients
- 3 Tbsp.
natural peanut butter
- 2 Tbsp.
reduced-sodium soy sauce
- 2
to 3 Tbsp Szechuan chili oil
- 1 Tbsp.
fresh lime juice
- 2 tsp.
honey
- 1/2 tsp.
Chinese five-spice
- 1 Tbsp.
canola oil
- 8 oz.
ground pork
- 12 oz.
ramen or lo mein noodles
- 3
cloves garlic, grated
- 1 Tbsp.
grated fresh ginger
- 1
small red chile, thinly sliced
- 3 cups
tatsoi or baby spinach
- 2
scallions, thinly sliced
- 1/4 cup
roasted peanuts, finely chopped, for serving
Directions
- Step 1Make vinaigrette: In a bowl, combine peanut butter, soy sauce, chili oil, lime juice, honey and five-spice.
- Step 2Heat canola oil in a large cast-iron skillet on medium-high. Add pork and cook, breaking up into tiny pieces, 4 minutes. Then cook, without stirring, 3 minutes. Turn and cook, stirring often, until crispy and browned, 3 to 4 minutes more.
- Step 3Meanwhile, cook noodles per package directions. Drain, reserving 1/2 cup cooking liquid.
- Step 4Toss garlic, ginger and red chile in pan with pork and cook 2 minutes. Remove from heat.
- Step 5Whisk 1/4 cup reserved cooking liquid into bowl with vinaigrette, and toss in noodles to coat, adding more liquid as necessary. Then toss with tatsoi until beginning to wilt. Top with crispy pork and sprinkle with scallions and peanuts if desired.
