Give up meat without losing any flavor with these wholesome patties that make trying Meatless Monday easy. Cheddar cheese adds body to these hearty burgers.

Ingredients

  • 1 can pink beans
  • 1/2 cup breadcrumbs
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup corn kernels
  • 1/2 cup sharp Cheddar cheese
  • Cooking spray
  • Lettuce
  • tomatoes

Directions

    1. Step 1In food processor, pulse beans, breadcrumbs, salt, and pepper until ground.
    2. Step 2Add corn kernels and Cheddar cheese; pulse to just combine. Form into 4 (4-inch round) patties.
    3. Step 3Coat 12-inch nonstick skillet with cooking spray. Add patties; coat with spray. Cook on medium 15 minutes or until browned, turning once. Serve on buns with lettuce and tomatoes.
