Ingredients
- 2 Tbsp. olive oil
- 1 Tbsp. butter
- 2 lb. onions
- 1 tsp. sugar
- 1/4 tsp. dried thyme
- 1/4 tsp. salt
- 1 loaf French bread
- 7 oz. soft goat cheese
- 2 Tbsp. chopped fresh parsley leaves
Directions
- Step 1In 12-inch skillet, heat oil and butter over medium heat. Add onions, sugar, thyme, and salt; cook 20 minutes or until very soft, stirring frequently. Cook 20 minutes longer or until onions are golden brown, reducing heat to medium-low if onions begin to stick, stirring frequently.
- Step 2Meanwhile, preheat oven to 425 degrees F. Arrange bread slices in jelly-roll pan and toast 8 minutes, turning over once. Cool slightly. Spread goat cheese on toasted bread slices, then top with caramelized onions. Sprinkle toasts with parsley to serve.
