Healthy greens get a boost of rich flavor from sautéed bacon and onion and a sprinkling of tangy goat cheese.

Ingredients

  • 6 slice bacon
  • 1 cup chopped onion
  • 7 cups thinly sliced kale leaves
  • 2 Tbsp. red wine vinegar
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup crumbled goat cheese

Directions

    1. Step 1In 12-inch skillet on medium, cook bacon, chopped, 8 minutes. Stir in onion; cook 8 minutes or until tender.
    2. Step 2In large bowl, toss thinly sliced kale leaves with red wine vinegar, salt, and pepper, and then with bacon mixture.
    3. Step 3Top with crumbled goat cheese.
