What differentiates a cold press juicer from a centrifugal juicer is that it operates at a slower speed, which experts say is more gentle on ingredients and retains more nutrients. Slow press juicers use an auger to crush fruit and veggies that are then squished through a screen to press out the juice, while centrifugal juicers use a flat cutting blade that cuts up produce before it is spun at a high speed to separate the juice from the pulp.
