S'mores Crispy Rice Treat Sandwiches
Campfire meets ice cream truck.

When we set out to recreate the iconic dessert in frozen-novelty form, we started by folding graham crackers into crispy rice marshmallow treats. But something was missing. Torching the ice cream sandwiches’ tops adds a hit of that campfire smokiness.

Ingredients
Nonstick cooking spray
- 6 Tbsp.
unsalted butter
- 1
12-oz bag marshmallows
- 6 cups
crispy rice cereal (we used Rice Krispies)
- 5
honey graham cracker rectangles, broken into pieces
- 1 1/2 qt.
chocolate ice cream
Flaky sea salt, for topping
Directions
- Step 1Line 9- by 9-inch baking pan with 2 perpendicular layers of parchment paper, leaving overhang on 2 sides; coat with nonstick cooking spray.
- Step 2Melt butter in large pot on medium. Add marshmallows and stir until melted and smooth, 3 to 4 minutes. Remove from heat, add cereal and graham crackers and stir until thoroughly coated, 2 minutes.
- Step 3Transfer half of cereal mixture to prepared pan and evenly press into bottom of pan. Using top layer of overhanging parchment, transfer shaped cereal square to sheet pan, then remove parchment layer from underneath and set aside to avoid burning. Carefully and quickly pass kitchen torch in side-to-side motion over surface of crispy rice treat until top is golden brown and nicely charred in spots; set aside.
- Step 4Press remaining cereal mixture evenly into bottom of same baking pan. Let both layers of crispy rice treat cool to room temperature, about 5 minutes.
- Step 5Cut open ice cream carton; slice ice cream 1/2 inch thick and arrange on top of crispy treat still in pan, gently mashing, cutting, and shaping to create even layer, covering cereal treat completely.
- Step 6Top with second layer of crispy rice treat, torched side up. Press down to make sandwich even. Freeze until ice cream is firm, 3 to 4 hours.
- Step 7Using overhangs, transfer ice cream sandwich to platter or board. Sprinkle with flaky sea salt. Cut into 16 squares and serve immediately.
