Horseradish, Tomato and Steak Pasta
This no-cook tomato sauce gives off serious Bloody Mary vibes.

When it’s tomato season, this pasta highlights summer’s best. We sprinkled the dish with fresh horseradish, which has a distinct sharp and slightly spicy bite that complements the sweetness of the tomatoes. This root has a long fridge life (without the vinegar and preservatives of jarred horseradish) and is worth seeking out from farmers' markets and specialty stores.
Ingredients
- 12 oz.
linguine
- 1 lb.
sirloin steak (1 inch thick)
- 1
3-inch piece fresh horseradish, peeled and finely grated (about 6 tablespoons)
- 1/4 cup
thinly sliced flat-leaf parsley stems, plus ½ cup small parsley leaves
- 2 Tbsp.
lemon zest (from 1 to 2 lemons), plus 4 teaspoons lemon juice
- 1 lb.
large very ripe heirloom tomatoes (about 2)
- 2
large cloves garlic, finely grated
- 1/2 cup
olive oil
Kosher salt and pepper
- 1 lb.
cherry or grape tomatoes, halved
- 1/2 cup
small basil leaves
Directions
- Step 1Cook pasta per package directions then drain. Heat broiler with oven rack 6 inches from heat source and place rimmed baking sheet on rack to preheat.
- Step 2Place steak on preheated baking sheet and season with 1/2 teaspoon each salt and pepper. Broil to desired doneness, undisturbed, 7 to 9 minutes for medium-rare. Transfer to cutting board and let rest 5 minutes before thinly slicing.
- Step 3Meanwhile, in small bowl, combine horseradish, parsley stems, and lemon zest; set aside.
- Step 4Working in large bowl, coarsely grate large tomatoes (you should have 11/4 to 11/2 cups pulp); discard skins. Stir in garlic, oil, lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon coarsely ground pepper. Add cherry tomatoes and toss to coat.
- Step 5Add pasta and toss to combine. Fold in sliced steak, then sprinkle with horseradish mixture, parsley and basil leaves, and additional pepper if desired.
