Spicy "Chicken Pizza" Parm
Chicken Parm fans, this one's for you.

Satisfy your chicken parm cravings with a protein-packed twist. Instead of the usual breading and frying, we created a “chicken pizza” using ground chicken. It’s broiled with sauce and plenty of mozzarella for a tasty revamp that’s also a lot less work.
Ingredients
Nonstick cooking spray
- 1
large egg
- 1/4 cup
grated Parmesan cheese
- 2
cloves garlic, grated
- 2 oz.
extra-sharp white Cheddar cheese, coarsely grated (about 2/3 cup)
Kosher salt and pepper
- 1 1/2 lb.
ground chicken (92% lean)
- 1/2 cup
plus 2 Tbsp jarred arrabbiata sauce
- 4 oz.
low-moisture part-skim mozzarella, cubed
- 1/4 cup
grated Pecorino Romano cheese
- 2 Tbsp.
small basil leaves
Directions
- Step 1Heat broiler with oven rack 6 inch from heat source. Spray rimmed baking sheet with nonstick spray.
- Step 2In large bowl, beat egg, then stir in Parmesan, garlic, Cheddar, and 1/2 teaspoon each salt and pepper. Fold in chicken until just combined. Spread into 12- by 8-inch oval on prepared baking sheet and broil 6 minutes (chicken will finish cooking later).
- Step 3Spread chicken with arrabbiata sauce, dot with mozzarella, and continue broiling until chicken is cooked through and mozzarella is melted, 2 to 4 minutes. Let rest 5 minutes, then sprinkle with pecorino and basil.
Recipe Tip: Look for ground chicken with a higher fat content (we used 92% lean). It won’t dry out as easily andwill be more forgivingif you overcook it.
