Caesar Salad "Chicken Pizza"
We're giving Caesar Salad a high-protein makeover.

Here’s our take on the viral “chicken pizza” that replaces the usual crust with chicken. We made the base with ground chicken, broiled it until juicy, then topped it with a zippy Caesar salad.
Ingredients
Nonstick cooking spray
- 1/4 cup
panko
- 1 Tbsp.
olive oil
Kosher salt and pepper
- 2 tsp.
lemon zest plus
- 1 1/2 Tbsp.
lemon juice
- 6 Tbsp.
mayonnaise
- 2 tsp.
Dijon mustard
- 1 1/4 tsp.
Worcestershire sauce
cloves garlic, grated and divided
- 1
large egg
- 2 oz.
extra-sharp white Cheddar cheese, coarsely grated (about 2/3 cup)
- 1/2 cup
grated Parmesan cheese, divided
- 1 1/2 lb.
ground chicken (92% lean)
- 1 lb.
romaine hearts (halved or cut into thirds crosswise if large), chopped (about 12 cups)
Directions
- Step 1Heat oven to 425°F. Spray rimmed baking sheet with nonstick spray.
- Step 2On small rimmed baking sheet, massage panko with oil and a pinch of salt. Toast in oven, tossing halfway through, until golden brown, 4 to 5 minutes. Stir in lemon zest.
- Step 3Heat broiler with oven rack 6 inches from heat source. In large bowl, whisk together mayonnaise, mustard, Worcestershire sauce, lemon juice, 1 clove garlic, and 1/8 teaspoon pepper to combine.
- Step 4In large bowl, beat egg, then stir in Cheddar, 1/4 cup Parmesan, remaining 2 cloves garlic, and 1/2 teaspoon each salt and pepper. Fold in chicken until just combined. Spread into 12- by 8-inch oval on prepared baking sheet and broil 6 minutes. Spread 3 tablespoons dressing on top and broil until chicken is cooked through, 1 to 3 minutes more.
- Step 5Add romaine to remaining dressing and toss to coat, then toss with remaining 1/4 cup Parmesan. Serve “chicken pizza” topped with salad, panko, and cracked pepper if desired.
Recipe Tip: Look for ground chicken with a higher fat content (we used 92% lean). It won’t dry out as easily and will be more forgiving if you overcook it.
