Ingredients
All-purpose flour, for dusting
- 1
sheet puff pastry (half of 17.3-ounce box), thawed
- 4 oz.
cream cheese, cold and cut into 16 equal pieces
- 4 oz.
guava paste, cut into 16 equal pieces (be sure the first ingredient is guava pulp; we used Iberia)
- 1
large egg, beaten
Turbinado sugar, for sprinkling
Directions
- Step 1Arrange racks in upper and lower thirds of oven and heat oven to 400°F. Line 2 baking sheets with parchment paper.
- Step 2On lightly floured surface, roll out pastry sheet to 10-inch square, then cut into sixteen 2 1/2-inch squares. Transfer to prepared baking sheet. Using sharp paring knife, score 1/4-inch border around each square. Using fork, prick holes all over inner square (not border). Freeze until firm, 20 minutes.
- Step 3Divide pastry squares between 2 parchment-lined baking sheets, spacing evenly. Place cream cheese in center of each square, followed by guava paste.
- Step 4Brush borders with beaten egg and sprinkle with turbinado sugar. Bake, switching positions of baking sheets on racks halfway through, until pastry is puffed and golden brown, 13 to 16 minutes. Let cool at least 10 minutes before serving.
