Ricotta Gnocchi With Toasted Garlic and Walnuts

Ingredients

For Gnocchi

  • 1

    15-oz container ricotta (scant 2 cups)

  • 1

    large egg yolk

  • 1 cup

    all-purpose flour, plus additional 2 to 6 Tbsp flour as needed, plus more for surface

  • 1/4 cup

    cup grated Parmesan, plus more for serving

  • 2 cups

    baby spinach, chopped

  • 1 cup

    fresh basil, chopped

  • Kosher salt and pepper

For Sauce

  • 3 Tbsp.

    olive oil

  • 1/4 cup

    walnuts, roughly chopped

  • 2

    cloves garlic, thinly sliced

Directions

    1. Step 1In large bowl, combine ricotta and egg yolk. Add 1 cup flour, Parmesan, spinach, basil and 1/4 teaspoon each salt and pepper. Fold together to make a soft (but not sticky) dough; do not overmix. Fold in remaining 2 to 4 tablespoons flour as needed.
    2. Step 2Lightly flour large baking sheet. With lightly floured hands, roll dough into 2 logs, 1 inch wide and about 8 inches long. Cut dough into 1-inch pieces; transfer to prepared baking sheet and refrigerate, covered loosely in plastic, 30 minutes.
    3. Step 3Meanwhile, heat oil in medium skillet on medium. Add walnuts and cook, stirring, 2 minutes. Add garlic and cook, stirring, until nuts are lightly toasted and garlic is golden brown, 1 minute; remove from heat.
    4. Step 4Bring large pot of water to a boil; add 1 tablespoon salt, then gnocchi, and cook until all have risen to the surface, 2 to 3 minutes, then cook 1 minute more.
    5. Step 5Using large slotted spoon, transfer gnocchi to skillet with walnuts, tossing gently to coat. Serve sprinkled with Parmesan if desired.
